Sometimes you want a biscuit and just don’t want to make a whole pan. This recipe is perfect for just two biscuits. I didn’t want to pre-heat my oven to 500 degrees and bake two biscuits for 8 minutes, so I put them in my toaster oven for 10 minutes.
1 cup self-rising flour
2 tablespoons Crisco Shorting (chilled)
1/3 cup buttermilk
In a small bowl add the flour and chilled shorting. Using your hand or fork combine the two ingredients together. Make a well in the middle and slowly work in the buttermilk.
Preheat oven to 500 degrees and bake for 8 minutes (or bake in toaster oven for 10 minutes).

Who can ever eat just one biscuit, Karen? Or just two? Not me.
True, it’s my way of not over eating. I could eat both, but had some fruit too. The weekend is when I make a skillet full.
Actually, this is perfect for me and hubby. I never make biscuits because we will eat the whole pan or the rest of the pan will be wasted. Thanks. for this recipe. A little southern treat every now and then makes a delicious life, don’t you think?

Thanks for this recipe. I have made this several times already. My husband and I are from the South….but he doesn’t eat biscuits often. So, I eat both biscuits. This recipe allows for no over eating and no waste. Perfect.
