In the South, delicate cornmeal flatbreads known as hoecakes are a classic. Originally a simple mixture of cornmeal, water, salt, and bacon grease. You can also use your favorite cornbread recipe in your waffle iron. Serve these hoecakes alongside pinto beans and fried taters 
You can make them fluffy, or flat and crispy. Serve them hot with butter and a glass of cold milk!

This is the worlds best cornbread…honest! I know it’s hard to believe it’s made with Bisquick, but it is. Even if you don’t like cornbread just give this a try. It is so light and wonderful you can’t stop eating it!
2 cups Bisquick
6 Tbsp. cornmeal
1/4 cup sugar
1/2 cup butter (1 stick)
2 eggs
1 cup whole milk
Mix dry ingredients together. Melt butter in microwave, add milk and eggs to butter. Add butter mixture to dry ingredients and stir to combine. Pour batter into skillet (no need to preheat skillet). Can use 8×8 greased baking dish.
Preheat oven 350 degrees, and bake for 35 minutes.

Preheat oven to 375°F.
Spray a standard 12-count muffin pan with cooking spray, or line your pan with paper liners.
In a large bowl, mix the cornmeal, flour, sugar, baking soda, and salt. In another bowl, whisk together the buttermilk, butter, eggs, and honey. Add the wet ingredients to the dry ingredients and stir until just mixed.
Evenly divide the cornbread mixture into your prepared pan. Bake for 15 minutes, or until golden.
Yield: 12 muffins

You want good cornbread?…here it is! Not just boring ol’ cornbread. You either like cornbread or you don’t. We have been invited to dinner at people’s home and sometimes there would be cornbread.
I have almost been turned against it because some people’s are so tasteless and dry. I have three of the most wonderful cornbread recipes ever, and this is one of them. If you want a great tasting and moist cornbread than give this a try.
2 cups cornmeal
1/3 cup oil
1 cup cream style corn
1 cup sour cream
2 eggs
Preheat oven 375 degrees. Preheat greased skillet and bake about 25 mins.
